This maple syrup comes to us from just down the road in Pittsfield, NH, where the Matras family has been making quality NH maple syrup since 2002. Each pint is Grade A Amber and is a delicious amber nectar that we enjoy on any waffles or pancakes and even in our very own Maple Cream Espresso Sodas at our Wolfeboro cafe.
Matras Maple is a 1,300+ tap and growing operation that started in 2002 by Willie and his brother Asa with the help of their dad. They started with just a little homemade set up with only about 20 taps and have been expanding ever since as time and budget allow. The trees tapped are located in Chichester, Epsom, and Pittsfield. Two of the sugar bushes tapped have recently been equipped with vacuum systems which increases sap yield and helps make the yield a little more predictable. They run the sap through a reverse osmosis machine before boiling which removes 50-75% of the water. They then boil the sap on a two and a half by eight foot wood fired evaporator.
